Alexandre Loiseau is well established as a chef in Montreal’s culinary world. He is among the best in the profession and in Quebec. Attuned to the rhythm of the seasons, this young chef is devoted to the fresh flavours of the local products that characterize his signature dishes.

After discovering his passion for cooking as a teenager, Alexandre completed his training at the ITHQ in 1997. He then headed to France for an internship with Bernard Loiseau (three Michelin stars). Upon returning to Montreal, Alexandre perfected his technique in the city’s best kitchens, notably alongside David McMillan (Joe Beef), Stelio Perombelon (Aux Caprices de Nicolas), and William Frachot (two Michelin stars, Hostellerie du Chapeau Rouge).

From 2004 until 2015, Alexandre evolved in his role as chef while co-owner of Bistro Cocagne with Christine Lamarche and Normand Laprise (Toqué). He offered elegant market cuisine that highlighted the products of the local terroir in exquisite fashion.

Since 2010, Alexandre has been involved with La Tablée des Chefs, an organization whose goal is to feed families in need and educate future generations by developing their culinary self-sufficiency. Through this organization, Alexandre has participated in writing recipe books and in several television projects. He has also collaborated with chefs from all four corners of the globe, including Monica Patino (Mexico) and Guy Ferdinand (Martinique), through this non-profit organization.

What makes Alexandre’s reputation is his refusal to compromise when it comes to the quality of his ingredients, and his continual need to surpass himself. Alexandre may prefer to work in the shadows, but his cuisine is always brilliant, transparent, and elegant, always accurate and just a tad provocative. With Alexandre, each bite is pure delight.
